The book

The “Tempi di Recupero” book was published in August 2018 by Quinto Quarto Edizioni. A book with the goal of collecting all the recipes and experiences from these events in one place. A book where you will find essays on reuse, on recycle and on reinvention, explaining their social and economic worth; with participation from all the chefs involved in the events, explaining how they approach the fight against food waste.

The foreword is by Carlo Petrini, founder and president of Slow Food, and by Norbert Niederkofler, a three Michelin star chef widely known for his zero tolerance approach to food waste in his kitchen.
