Tempi di Recupero Week

A week dedicated to talk about what matters the most to us, in the way we care for it the most!

We envision sustainability as a simple daily action as well as a special moment that we will focus on and showcase during the global Tempi di Recupero week.

Through this event we want to increase the impact of our voice about what matters the most to us, in the way we care for it the most.

Each restaurant will have the freedom and the opportunity to create its own menu and tell the world its own way to reduce waste through the use of kitchen scraps, food surplus and traditional knowledge.

Anyway, what is Tempi di Recupero Week?

It is a week in which participants can pick one or multiple days to interpret the three main themes of recovering food in the kitchen:

The Leftovers
of the day before
The use of the whole animal or
fish or vegetable scraps
Ancient and
traditional recipes.

We are very proud of having many beloved friends and excellent partners who have already joined our cause. We are talking about two great projects:

Food for Soul the non-profit organization founded by chef Massimo Bottura and Lara Gilmore to empower communities to fight food waste through social inclusion.
The second project is Food for Change, the international Slow Food campaign that promotes solutions to empower local and clean markets, aims to create more fair food production chains and, keeps supporting endangered ways of producing food which are part of our shared heritage.

The majority of the income obtained during Tempi di Recupero Week 2019 will be donated to those projects.

 

Let’s reduce worldwide waste together!

 

Nowadays we have the opportunity to work together on highlighting produce in its entirety, with the goal of eliminating food waste.

Our initiative may seem small, but we are strongly convinced that simple daily actions can increase enough awareness to bring wider change.

Let’s add a small but solid brick in order to make a more sustainable and ethical world!
