Tempi di Recupero Week 2020

Tempi di Recupero Week is about to come back! 

It’s the week that brings together creative chefs, osti (owners of the typical Italian Osteria), azdore (traditional figure of the housewife, cook and keeper of the house), gelatieri (gelato makers) and vignaioli (wine makers) from all over the world to promote “food upcycling” in the kitchen.

We are ready for the 2020 edition, which will be held from the 21st to the 29th of November!

 

A week to tell what we care about, in our own way.

A week to share our view of sustainability as both a daily habit and special gesture.

A week dedicated to “food upcycling” in the kitchen at the same time all over the world.

Each participant will be free to create his own menu and tell his idea of food upcycling!

We have been organizing Tempi di Recupero Week since 2019.
Each participant will be free to build his very own special menu del recupero and tell his idea of “food upcycling” in the kitchen, which can have three meanings:

Reuse of Leftovers
from the day before
Nose-to-tail eating
the approach to meat, fish and vegetables that makes use of the whole product
Tradition
a rediscovery of old forgotten recipes

Each restaurant can choose to offer the whole special menu del recupero and/or the single piatto del recupero also as a take-away, to give an alternative to those who want to participate to Tempi di Recupero Week from home.

What do we do?
  • the graphic layout of your special menu with the same design all over the world
  • the geo-referenced location of your restaurant on our website, where the menu, the dates and your details will be visible
  • creation of a Facebook event of your special evening and you will be co-admin to promote it
  • a membership card, valid for one year, to become a member of our big network of recupero, and to have access to the advantages it can offer
What you have to do to participate:
  • Create your own special menu del recupero – or, if you prefer, just a few dishes – with different courses based on the 3 categories of “food upcycling” we explained above (using only one, two, or all of them).
  • Choose if you want to keep the menu for just one lunch/dinner, or for more than one, as long as it is within the week of recupero, from Saturday 21st to Sunday 29th of November (indicate us the specific days).
  • Organize your special evening as you prefer: you can either set a maximum number of guests and reserve a part of the restaurant for them or you can offer this special menu a la carte, to everyone. We will send you the digital version of your menu that you can print out.
  • Establish the price of the menu del recupero, which has to be slightly lower than the one of the usual tasting menu you offer (for example if the menu of your restaurant is 70€, Tempi di Recupero Week menu should be around 65€), specifying whether the price includes beverages or not.
  • Subscribe, filling in the online form on our website.
  • Make the payment, choosing the contribution that feels right for you.
What can you do after sending us your details?

Tempi di Recupero is a non-profit cultural association, and it carries out its initiatives thanks to you, who chose to support us.

For this 2020 edition, we have thought of a special formula for the participation of those who are having hard times, who can become members of Tempi di Recupero and take part to the Week at a reduced fee.

 

You can choose between three options for your contribution. Different prices bring different benefits:

 
Socio del Recupero: 30€
Difensore del Recupero: 100€
Campione del Recupero: 250€

Tempi di Recupero wants to support also two non-profit organizations, similar for purpose and philosophy. If you wish to make a greater contribution to the chosen donation, the difference will be given to:

Food for Soul, the association founded by Massimo Bottura and Lara Gilmore to fight food waste and improve social inclusion

Food for Change, the project of Slow Food to face climate change
