Since 2019, a week to share what matters to us, in the way that matters to us!
A week that brings together creative chefs, hosts, gelato makers, artisans, bartenders, winemakers, and individuals from around the world in the name of awareness and recovery in the kitchen!
We want to make our voice heard on gastronomic culture, recovery, and sustainability, in the playful and convivial way that distinguishes us and makes our network resilient.
Space for creativity and activities where recovery, sustainability, and awareness are the common denominator. The days of TdR Week are the time for all of us to come together loudly to discuss issues of full utilization of raw materials, circular cooking, and recovery. But they are also an opportunity to be together for the pleasure of it, to enjoy telling stories and getting to know each other, and to strengthen our shared vision.
Each participant will have carte blanche to build their own menu and tell their recovery story at the table.
How to participate?

Create a sustainable menu – or even just a few dishes if you prefer.

You can choose whether to offer your menu for just one day or replicate it for multiple days, as long as they fall within TdR Week.

Involve other industry operators who share the same philosophy!
It’s better together: involve the people you collaborate with or contact those who interest you, chefs, winemakers, gelato makers, artisans, bartenders… it will all take the shape you want and best represents your idea of recovery.
Any examples:
- A four-handed dinner with a gelato maker and a bartender.
- Dinner with a producer and a gelato maker.
- An alcoholic gelato flavor, crafted with the bartender, to be offered in the gelateria and at the bar.
